At the market this morning the talk was of autumn and frost in the mountains of the Aveyron. We bought sardines to grill at the garden where the autumnal mood continued. It's strange that summer crops started late, but they're finishing early. It seems to have been a short season.

I picked wild fennel seeds to bring home to dry. We use them a lot, crushed with pork or in sauces for pasta or in risottos.
J'ai ramassé des graines de fenouil sauvage pour les secher chez nous. Nous cuisinons souvent avec elles, pilées avec le porc ou en sauce pour les pâtes ou dans un risotto.
A few of our olives are ripening and I'm worried about this. It's very early, at least a month earlier than last year and the olives have small marks on their skin. I don't think that this is the dreaded olive fly (Dacus olea) ... I hope not.
Quelques olives mûrent et ça m'inquiète. C'est très tôt, au moins un mois plus tôt que l'année dernière et les olives ont des petites taches sur la peau. Je ne pense pas que c'est la mouche de l'olivier (Dacus olea) qu'on redoute ... J'éspère que non.

And everywhere we go we find winegrowers with their trailers full of grapes. Et partout sur la route on rencontre les viticulteurs avec leurs remorques pleines de raisins.

Since I read the Observer last Sunday I've been thinking a lot about meat.Dr Rajendra Pachauri, chair of the United Nations Inter-governmental Panel on Climate Change, had said that for the sake of the environment, people should have one meat-free day a week and if possible reduce their consumption of meat further.Lo Jardinièr and I already have at least one meat-free day a week - should we be eating less meat?
Depuis le dimanche dernier quand j'ai lu l'Observerj'ai pensé beaucoup de la viande.Dr Rajendra Pachauri, le président de la Commission de changement du climat de l'ONU, avait dit qu'il faut un jour par semaine sans la viande pour le bien de l'environnement.Lo Jardinièr et moi, nous passons au moins un jour par semaine sans manger la viande -devons-nous manger moins de viande?
Apparently, 18 % of greenhouse gas emissions are caused by meat production and the methane produced by animals, mostly cows.However, this figure includes transport and processing and it is a global figure - for example, the figure for the UK is said to be 8 %.It seems to me that the problems are caused mainly by beef production and by industrial farming practices.I wonder whether we should be questioning these rather than trying to persuade people to give up meat altogether.

This is a much more complicated issue than it first appears.The Observer article goes on to say that in some upland areas of the world rearing animals is the only way to produce food from the land.Where I come from in Wales it is impossible to use the moorland to grow vegetables at 300 metres above sea-level.The only farming that is possible is sheep-rearing.And sheep farming actually preserves these landscapes - without the grazing the heather would grow out of control, killing off other plants and leaving huge fire-prone barren areas.This would threaten the peat bogs which are an important store of CO2.
C'est une question beaucoup plus compliquée qu'elle semble.L'article de l'Observer continue - dans quelques hauterres du monde la seule mode de utiliser la terre pour la production alimentale est d'y élever les animaux.Sur les hauterres du Pays de Galles, d'où je viens, c'est impossible de cultiver les légumes à 300 m.L'élevage de moutons et de brebis est la seule méthode d'agriculture qui y est possible.Et en fait cet élevage préserve l'environnement.Sans les moutons qui broutent la lande, la bruyère pousserait sans controle, elle tuerait les autres plantes et lasserait de la terre aride encline au feu.Ça menacerait la tourbière qui est une réserve importante de CO2.
Beef farming is problematic - as is dairy farming - so I think that we should be trying to find ways of extending sustainable production of other meat - pork, chicken and other poultry - locally to the market for it, in order to reduce transport.Smallholders and small farmers have found that free-range pigs and chickens are a necessary part of their food production.John Seymour found this many years ago (The Fat of the Land, Faber, 1974).The environmentalist Michael Pollan, author of The Omnivore's Dilemma, has researched this subject extensively in the USA and found:

It is simplistic and unrealistic to suggest that everyone should become vegetarian - we need to ask questions about how we can extend sustainable local food production for omnivores and for those who choose a vegetarian diet.Some people find these questions difficult - which they are, of course.I have been told by one vegetarian blogger that my comments are not welcome on his blog.But it is too important to ignore.I'm not sure what the answers are, but we need to think about the issues and discuss them.

Some vegetarian recipes / des recettes végetériennes
Peel the tomatoes and chop them.Chop the onion.Liquidise with the onion, oil and salt.Serve chilled garnished with chopped basil leaves.
Épluchez les tomates et coupez-les.Coupez l'oignon doux.Mélangez-les avec l'huile et le sel dans un mixeur.Servez la soupe fraîche, garnie de feuilles de basilique.
Börek (a Turkish recipe / une recette turque)
4 sheets of fillo pastry / 4 feuilles de brick
200 gm ricotta / fromage de brebis
1 sweet onion / oignon doux
2 cloves of garlic / gousses d'ail
a small bunch of parsley /un petit bouquet de persil
ground coriander, paprika, cumin / un peu de coriandre, piment doux, cumin
salt / sel
Chop the onion, garlic and parsley.Mix with the ricotta, spices and salt.
Coupez l'oignon, l'ail et le persil.Mélangez-les avec le fromage, les épices et le sel.
Cut the pastry sheets in half (the ones I bought came in circular sheets about 20 cm in diameter).Put a spoonful of the cheese mixture on each piece and fold into triangles.
Coupez les feuilles de brick en deux.Mettez une cuillerée du mélange de fromage sur chaque morceau de brick and le pliez en triangle.
Fry the triangles in olive oil until they are lightly browned.Serve hot.
Poêlez les triangles dans un peu d'huile d'olive jusqu'à ce qu'ils soient dorés.Servez-les chauds.
After the excitement of the thunderstorm Gabian is quiet again, apart from the vinegrowers' tractors going out to the vineyards and returning with the grapes that were beaten from the vines by the storm. The coquillage - shellfish - seller comes to the village every Thursday afternoon and Saturday morning, so this morning Lo Jardinièr went to buy some mussels for our lunch.
Après l'excitation de l'orage Gabian est tranquille de nouveau, à part des tracteurs des viticulteurs qui sortent aux vignobles et reviennent avec les raisins qui étaient battus des vignes par l'orage. Le marchand de coquillage arrive à la place du village chaque jeudi après-midi et chaque samedi matin, donc ce matin Lo Jardinièr y est allé acheter des moules pour notre déjeuner.

for 4 as a first course, 2 as a main course une entrée pour 4 personnes, un plat pour 2
1 kg mussels / moules 1 large onion, thinly sliced / gros oignon, coupé en tranches fines 4 cloves of garlic, chopped / gousses d'ail hachées 250 ml white wine / vin blanc 150 ml crème fraîche thyme, savoury and a pinch of paprika / thym, sariette, un peu de piment doux salt / sel 25 gm butter / beurre 2 tablespoons olive oil / 2 cuillerée à soupe d'huile d'olive
Clean the shells of the mussels and remove the beards. Nettoyez les moules et enlevez les 'barbes'.
In a large saucepan, cook the onion gently in the butter and olive oil for about 10 minutes. Add the garlic for 2 minutes.
Dans une grande marmite, faire cuire à feu doux l'oignon dans le beurre et l'huile pour environ 10 minutes. Ajoutez l'ail pour 2 minutes.
Remove from the heat and allow to cool for a few minutes. Retirez la marmite du feu et laissez-la refroidir pour 2 minutes.
Add the herbs, paprika, salt and wine. Add the mussels and bring slowly to the boil. Simmer until all the mussel shells have opened, about 5 minutes. Discard any shells which have not opened.
Ajoutez les herbes, le piment doux, le sel et le vin. Ajoutez les moules et faites-le bouillir. Faites-le cuire à feu doux jusqu'aux coquilles sont ouvertes, environ 5 minutes. Jetez les coquilles qui ne sont pas ouvertes.
Add the crème fraîche and serve the mussels with the sauce, wedges of lemon, some crusty bread and a glass of white wine. Ajoutez la crème fraîche et servez les moules avec la sauce, des morceaux de citron, des tranches de pain et un verre de vin blanc.
Yesterday evening the big thunderstorm which has been threatening for a few days finally arrived.For over an hour, just after dark, the sky was full of flashes of lightning and cracks of thunder, rain and hail fell, battering the windows so hard that I thought the glass would break.
Hier soir le grand orage qui nous a menacé pendant quelques jours est enfin arrivé.Pour plus d'une heure, juste après la tombée de la nuit, le ciel était pleine d'éclairs et de roulements de tonnerre.La grêle et la pluie battaient les fenêtres si fortque j'ai pensé que les vitres auraient cassées.
We worried about the vines in the area.The vendange (grape harvest)has started, but most of the grapes are still on the vines.Hail can damage them.This morning at Domaine des Pascales we were told that the damage had not been bad around Gabian, but perhaps was worse further up in the hills at Fos, Neffiès and Faugères.

There was less damage than we'd feared in our garden, too.
